Zachary Kolomeir is chef owner of Harbord Village’s Dreyfus, as well as Dovercourt’s two sisters, rotisserie Taverne Bernhardt’s and Jewish sandwicherie-come-delicatessen Vilda’s. 

 

Montreal born and raised, Zachary left Montreal’s Joe Beef as busboy to cut his teeth at the Culinary Institute of America. From there he worked under the tutillage of chef Eli Kulp at Philadephia’s Fork, while spending weekends commuting to cousin Noah Bernamoff’s newly opened Mile End Deli in New York City. 

 

In 2015 he returned to Montreal’s Little Burgundy, this time as line cook at Liverpool House. By 2017 he had stepped into the role of chef de cuisine at Joe Beef under Marc-Oliver Frappier, for a short lived but maximalist year before taking the leap in his move to Toronto in pursuit of a kitchen of his own.

 

Ever passionate about traditional French methods and elegance, Zachary filters his chops through the lens of his Jewish cultural identity. In his menus he aims to find balance between sophistication and beautiful ingredients, and the unpretentious nature of the family dinner table - always with intention.
